Ingredients

250g Shiitake Mushrooms, chopped
250g Chanterelle Mushrooms, chopped
1 Onion, diced
2 Bok Choi (or a green of your choice)
3 Scallions, sliced
250g Tofu, diced
3 cups Bone or Vegetable Broth
1 Tbsp Soy Sauce
1 Tbsp Fish Sauce (or Tamari for vegan option)
1 tsp Garlic Powder
1 tsp Ginger Powder
1 Tbsp Fresh Cilantro (optional)

Follow the steps

Step 1

Stir fry the ingredients for 10 minutes in a medium-low heat.

Step 2

Add the soy sauce, fish sauce, garlic powder and ginger powder and keep stirring for 5 more minutes.

Step 3

Add the bone broth and turn up the heat to high.

Step 4

Once is boiling, reduce to medium-low heat and leave it cooking for 20-30 minutes.
